Apricot Almond Bars These highly nutritious apricot almond bars are easy to make. They pack well for picnics, hiking, and are a great snack or dessert. Ingredients  2 cups blanched almond meal 1/2 cup flax meal 1/2 cup roasted almond butter 1/2 cup dried unsweetened coconut 1/2 cup dried apricots 1/2 cup coconut oil, melted, plus extra for greasing the baking dish 1/2 tsp unrefined sea salt Method   Toss all Ingredients into a food processor and process until smooth. Grease a baking dish and spread  mixture evenly into the baking dish. Allow the almond-apricot bars to harden overnight. Cut with a sharp knife. Enjoy.
